Jaqueline: I agree with you wholeheartedly. I don't even watch those programs because, quite frankly, I'm embarrassed at the obvious crassness and "action-oriented", neurosis that passes as cooking shows. I find that DIY has done the same thing with most of their garden shows.
My kids like Emeril, but I can only take a short time of even him. The "let's please the audience, let's be a character, let us entertain you attitude is certainly in vogue, but I find it terribly distracting.
I used to cringe in shame when Justin Wilson came on TV with his "Cajun" dialect, and clownish cooking. (He wasn't even a Cajun). It was sort of like being black and watching Amos and Andy.
Most of the cooking and other how to shows are fluff, with a couple of usable ideas thrown in.
