Southwestern Chicken Cordon Bleu

With a Smoky Raspberry Chipotle Sauce

The most popular item on the Broken Arrow Restaurant menu, this twist on the classic recipe gets its considerable kick from Smoky Raspberry Chipotle Sauce.

Broken Arrow Restaurant has been serving this unique Cordon Bleu since 2004. Southwestern cooking isn't always about the heat, but this recipe is! It's a blazingly glorious dish, but it really can be toned down a bit for those who prefer something milder. Ingredients

  • 2 med. Chicken Breasts, Boneless
  • 2 slices Black Forest Ham
  • 2 slices Pepper-Jack Cheese (or Jalapeno-Jack for the very brave)
  • 1 TB Vegetable Oil
  • Kosher Salt
  • Fresh Ground Black Pepper
  • Raspberry Chipotle Sauce (recipe follows)

Instructions

  1. Preheat oven to 350 degrees F.
  2. On a cutting board, butterfly each chicken breast and lay out flat, skinside down.
  3. Place a slice of ham and a slice of cheese on each breast and then close the breast around the filling.
  4. Heat oil in large oven-proof skiller over medium heat.
  5. Place chicken on paper towels to absorb excess moisture and avoid oil splatter.
  6. Season both sides of each chicken breast evenly with salt and pepper.
  7. Carefully add the chicken to the hot pan, skinside down.
  8. Cook for 2-3 minutes and then turn.
  9. Place the skillet in the oven and bake for an additional 15 minutes or so - cooking times will depend on the thickness of the chicken breast.
  10. Test for done-ness with an instant read thermometer. Place the point halfway through the thickest part of the thickest breast. When temperature reaches 155 degrees F, remove from heat, as the chicken will carry-over cook to the necessary 165 degrees F.
  11. For best results, do not over-cook.
  12. Serve with a small ramekin of Raspberry Chipotle Sauce, and sides such as Grilled Asparagus and Parmesan Mashers, or your favorites.

Smoky Raspberry Chipotle Sauce

Ingredients

  • 18 oz. jar Red Raspberry Preserves
  • 1 TB Chipotles in Adobo Sauce, seeded, de-ribbed, and finely minced.
  • 2 TB Apple Cider or White Vinegar
  • 1/2 tsp. Garlic Powder
  • 1/2 tsp. Onion Powder
  • 1/4 tsp. Cayenne Pepper
  • Kosher Salt

Instructions

  1. Whisk all ingredients together in a bowl.
  2. Taste to test for proper ratio of sweetness/tartness/heat. Add more vinegar, cayenne, or minced chipotle pepper if desired. Remember, this sauce is supposed to knock your socks off. Otherwise, it's just raspberry jam!

Tips for Raspberry Chipotle Sauce

Be very careful when preparing chipotles. Wear gloves, use caution, and DO NOT rub your eyes, nose, or any other sensitive places! Wash your hands after handling.

Make a double batch, as Raspberry Chipotle Sauce will keep in the fridge, in an airtight container, for at least a month. Use it as a glaze on pork roasts, a condiment on ham or turkey sandwiches, or even as a stir-fry sauce.
