Try my Orange Bourbon Sweet Potatoes to add some zip to the holidays. Sweet potatoes are a must at most holiday gatherings. And who doesn't like bourbon?
Orange Bourbon Sweet Potatoes are delicious, easy and full of vitamins (and bourbon!) They go well with pork, ham or turkey. [Editor's Note: I dug this recipe out of hiding in one of Jacqueline's blog postings, because I think we all need more bourbon in our holidays.]
Orange Bourbon Sweet Potatoes
a.k.a. Jackie's Killer Sweets
- 3 lbs sweet potatoes.Peeled and cut into chunks.
- 1 C light brown sugar
- 1/2 stick unsalted butter
- 1/4 C orange juice (plus some grated rind)
- 1/4 tsp salt
- 1/3 - 1/2 C bourbon
- Maple syrup to taste
Steam sweet potatoes until just tender. Cool, uncovered. Place in buttered baking dish. Simmer sugar, butter, OJ, salt until sugar is dissolved and syrup thickens. Stir in bourbon. Drizzle over potatoes. Bake about an hour. Baste occasionally. Top with a swirl of maple syrup. Can be made ahead.
